Grilled Aubergine with Ricotta and Balsamic

  • 1 aubergine

  • 100g ricotta

  • Balsamic Reduction

Method

  1. Slice Aubergine thinly approx. 1cm thick.

  2. Crumble ricotta over aubergine pieces and drizzle with balsamic

  3. Bake on greaseproof paper in over tray at 190°C until golden brown
