Strawberry and Balsamic Cheese Cake

  • 300g digestive biscuits

  • 100g soft butter

  • 400g mascarpone cheese

  • 700g cream

  • 200g sugar

  • 5 gelatine leaves

  • 200g strawberry coulis

  • 70g Balsamic Reduction

Method

  1. Mix digestive biscuits with melted butter, press evenly and firmly into a cake tin, and leave in fridge to set.

  2. Mix ream, sugar, mascarpone until soft peaks.

  3. Heat gelatine until liquid.

  4. Fold coulis and gelatine until liquid and add to cake tin. Leave in fridge to set.
